A great dress shirt is measured in millimeters — collar fit, shoulder seams, cuff length — so start with fit, not fabric. The shoulder seam should sit right at the edge of your shoulder, the collar should allow two fingers between neck and fabric when buttoned, and the cuff should peek about half an inch past your jacket sleeve.
